TL;DR
Bread = ciabatta, not toasted.
Meats = Sopressata salami, hot capocollo and mortadella
Cheese = provolone
“Juice” = 3:1 red wine vinegar:EVOO
Veggies = Shredded iceberg lettuce, roasted red peppers, thin sliced white onion, sliced banana peppers. Sliced Roma tomato
Spices = Dried basil, oregano, garlic powder, salt, pepper
Lube = Duke’s mayo one side, (the controversy!) EVOO other side

Been wanting to try making an Italian for almost 2 years. I love the posts here and watched a bunch of videos. I kinda followed Matty Matheson’s video by scooping out one side of the bread, adding the meats and cheese, pushing it into the “ditch” and then adding the veggies. I added Duke’s mayonnaise first before putting down the meats and seasoned the bread. On the other half of the bread, I added olive oil and seasoned it. I added the shredded/sliced veggies all juiced up on top of the meats/cheese and topped with slices of tomato. Seasoned that as well. Drizzled some juice on the tomato.

I felt the sandwich came out well, especially for my first time! I wrapped it because it helped a lot in keeping it together. And it looked cute lol We had a, umm… “discussion” on here last week on wrapping. If it’s large like this, I highly recommend it, otherwise it would have been a mess. My wrapping was awful since I ran out of paper.

I will most definitely do his again experimenting with the combination of meats & cheeses and try toasting the bread next time. I had a different list of meats, but I used what the deli had at that moment.

The things I would do differently is 50/50 oil & vinegar. I felt the 1/3 had too much vinegar, but I adjusted. I would also use less “juice” – a lot less. When I order at places, I always order extra so I kind of went HAM. The bread held up very well, but the shredded lettuce, etc. were quite soaked. I will use a smaller bread next time since this was too big. I still have half of it leftover.

Woke up at 3:33AM because of jet lag, tried some of the leftovers, and it tastes even better. Like exponentially better. And the bread is still holding up, even after drowning it!
