I tried to include photos of the process

For salmon:
Pat dry and season. All seasonings I did by eye but it’s around 1/4-1/2 teaspoon each except paprika which is about 1 teaspoon:

Paprika
Basil
Oregano
Rosemary
Sage
Parsley
Red pepper flakes
Option: do Italian seasoning and add paprika and red pepper flakes

Heat 2 tbsp olive oil on medium heat. Once hot, cook salmon skin side up for about 3-4 mins so you get a brown color and then flip and cook until desired doneness.
Remove to a plate and set aside.

For veggies:
1 chopped onion
4 cloves minced garlic
1 can fire roasted tomatoes (or fresh if you have them)
1/2-whole bag of fresh spinach
1/2 c veggie or chicken broth or white wine if you fancy it. I did veggie broth

To same pan used to cook salmon add onion and garlic and cook until translucent. Add tomatoes, spinach and broth. Cook until spinach is wilted. Then nestle the salmon back in and remove from heat. Spoon veggies over salmon.

For lentils I used sprouted black lentils but you can use whatever you like. I cooked according to the package and added cumin, turmeric, salt and pepper.

Plate up and enjoy!

I’d definitely cook that skin side down to start but looks good!

    Looks delicious!
I have one question though: Why are you cooking your salmon so aggressively?
I get the charring for flavor, but there is plenty albumin coming out of your salmon (the white stuff). That’s usually a sign of overcooking.
