From left to right:
Raspberry 45% (450g + 450g = 700g 4.8 pH 0.92 Aw)
Grapefruit 43% (300g + 200g = 350g 3.6 pH 0.91 Aw)
Peach 2×50% (600g + 300g = 600g 3.6 pH 0.92 Aw)
Cantaloupe 36% (470g + 360g = 550g 6 pH 0.87 Aw)
Plums 45% (1050g + 600g = 1200g 3.8 pH 0.91 Aw)
I’m curious about the Cantaloupe, While it’s a melon, with a ~6pH it’s extremely easy to remove water by boiling.. tastes like melon flavored honey 🙂
