SO GOOD!!!!

4 c fresh basil (no stems)
¾ c olive oil
½ c pine nuts
¼ c red wine vinegar
¼ c white miso paste
4 fresh garlic cloves
1 t red pepper flakes
salt and pepper to taste

Blend in Vitamix for ~30 seconds or until smooth. Use the tamper to incorporate the basil leaves.

*I like my pesto a bit saucier than chunky. If you like it chunky don’t blend it as much and put in a bit less olive oil and vinegar.

  1. So you add or recommend more salt to something that already has a lot of salt (miso is already very salty)?
