You can safely reduce the sugar in this recipe because it’s not a preserving agent. however your pickles will be more sour

No, it’ll just take off some of the bitterness. Shouldn’t be “sweet” tasting though.

Ive made this recipe. They came out sweet. Cut the sugar in 1/2 and try it.
