How does this stack up compared to the elite Asian good cheap eats in nyc ?

I tried them a year or two ago and it was way too thick for my liking (I pref west rice roll king / yi ji shi mo) with little protein. Is that a different style of making them?
Not trying to discredit it or anything if it’s just a different style from my preferences.
