If you're like me and find yourself craving nacho cheese flavored Doritos, I would like to introduce you to my creation, Zezeritos – vegan "Doritos"! They're actually super simple to make. Most of the work goes into creating the seasoning mix.
A bit of a disclaimer so nobody is too disappointed: I'm sorry, but there's just no way I can imitate the exact flavor of Nacho Cheesier Doritos. However, these are made with ingredients that are a lot better for you, with no preservatives or weird stuff. They are definitely nacho cheesy, cravable, super tasty – and best of all, vegan.
So first, you're going to need to make the seasoning mix. You only need about 2 or 3 tablespoons of seasoning to make a batch of Zezeritos (I recommend 3), but this recipe will give you enough mix to fill up a 16 oz jar.
Nacho "Cheeze" Seasoning Mix
Ingredients:
3/4 c nutritional yeast
1/3 c cashew or almond flour (for creaminess)
3 tbsp cornstarch or arrowroot powder (optional, for thickness)
3 tbsp tomato powder
1 1/2 tbsp onion powder
1 1/2 tbsp garlic powder
1 1/2 tbsp smoked paprika
2 tsp ground turmeric (for color)
2 tsp chili powder
2 tsp ground cumin
1 1/2 tsp table salt
1 tsp ground mustard
1 tsp ground black pepper
1/4 tsp cayenne pepper (optional, for heat)
Instructions:
First, pulse the nutritional yeast in a food processor or spice grinder until it is fine, smooth, and even in texture.
In a large mixing bowl, use a metal whisk to combine the nutritional yeast, cashew or almond flour, cornstarch or arrowroot powder, tomato powder, onion powder, garlic powder, smoked paprika, ground turmeric, chili powder, ground cumin, salt, ground mustard, ground black pepper, and cayenne pepper (if using). Mix well until all the ingredients are thoroughly combined.
Transfer the seasoning mix to a 16 oz (1 pint) jar with a tight-fitting lid. Label the jar with the date and contents.
To make Zezeritos:
Ingredients:
1 bag of your favorite store-bought, unsalted, unseasoned tortilla chips [I like La Rosa Totopos] (or homemade tortilla chips, if you prefer)
1-2 tbsp canola oil (store-bought tortilla chips usually have plenty of oil on them already, so start with 1 tbsp)
2-3 tbsp of nacho "cheeze" seasoning
Instructions:
You will need a half-gallon glass jar with a lid for this recipe. Fill the jar with tortilla chips, and jostle the jar a bit so there is about 1 or 2 inches of room left for the chips to be able to move around and be covered with seasoning.
Add the seasoning, and place the lid on the jar. Jostle the jar a bit if using store-bought chips to coat them with seasoning. Remove the lid, and add the canola oil. Place the lid on the jar again and secure it tightly. Shake the jar, but not vigorously so as to avoid breaking chips as much as possible. Carefully roll jar over and over then turn upside down, back, and forth for 10 to 15 minutes or until the tortilla chips are fully covered; allow to set for 30 minutes.
Empty the jar into a reclosable storage bag and enjoy as a snack anytime.

I’ll definitely try this! I desperately loved nacho cheese Doritos in my youth. There is a vegan version at my local natural foods store, but it’s very expensive. Of course it tastes not the same, but hits the spot, which is how you describe these and that’s perfect for me. Thanks for sharing!
Have you considered a little MSG in the seasoning mix? That might get you a touch closer potentially.
