I picked this up at Costco because it looked tasty and was right next to the American Wagyu Ribeye Cap and looked the same. About to grill it up but not sure the best way to prepare it. High heat sear on grill unwrapped? Or cast iron pan wrapped? Conflicting research so far. Only thing I’m set on is not sous vide for this time.

    I’m a little confused. Pichana is a sirloin cap and no matter how you slice it I don’t think it would ever roll or look like that. It definitely looks like a rib cap.

    Don’t unwrap them – keep them tied and cook either cast iron or grill – enjoy, these are the best steaks

    High heat grill.

    Preferably over hard wood charcoal.

    Salt only.

    Cook to rare, pull off grill, and let sit until medium rare.

    If you don’t have a high heat charcoal grill then cook it over a charcoal chimney. Blow a lot of air through it before you put them on.

    Keep them wrapped or they’ll fall apart. One of the best steaks I’ve ever had in my life was one of these cooked over charcoal.

    I’ve had those meat pinwheels before. Very good. All you need is s&p and garlic. Would be good in cast iron butter basted too.

    Keep it tied and rolled. Whether you grill or pan those bad boys, go with ripping hot, get a solid sear, and please – for the love of God! – don’t cook past medium at the most.

  16. For the crowd saying to keep it rolled…not worried about potential contamination? The reason it’s totally safe to eat rare/medium rare steak is that the outside gets exposed to high heat and so the surface temperature is well in excess of 165F, which kills any bugs. If it stays rolled and you shoot for an internal temp of 135 then you have surfaces that will not be exposed to high temperatures. It’s basically like eating ground beef cooked rare or medium rare.

  17. i like to put these on the smoker for about 1.5 hours with hickory at 200f , then to the charcoal for crust and color. leave the string on and presalt before putting on the smoker. wont need any salt later.

    What’s weird about this is that the Sirloin cap should be $7.99 per pound (I cooked two today) so they appear to be priced like Ribeye cap but labeled as loin cap.

    Is there multiples? My buddy in college worked in the meat dept. He’d intentionally mislabel ribeyes as “stew meat” and buy them when he clocked out.
