* 8 oz flat rice noodles * 1 cup firm tofu, cubed * 1 cup bean sprouts * 1/2 cup shredded carrots * 1/4 cup chopped green onions * 1/4 cup crushed peanuts * 2 tbsp tamarind paste * 2 tbsp soy sauce or tamari * 2 tbsp coconut sugar or brown sugar * 1 lime, juiced * 1 red chili, chopped (optional for heat) * 3 cloves garlic, minced * 1 shallot, thinly sliced * 1 tbsp vegetable oil * Fresh cilantro for garnish
Steps:
1.Soak rice noodles in hot water until soft. Drain and set aside.
2.Mix tamarind paste, soy sauce, coconut sugar, and lime juice for the sauce.
3.Cook tofu in hot oil until golden brown. Remove and set aside.
4.Stir-fry garlic, shallot, and chili in the same skillet.
5.Add noodles and sauce to the skillet, toss to coat.
6. Combine tofu, bean sprouts, carrots, and green onions with noodles. Toss well.
7.Garnish with crushed peanuts, cilantro, and lime wedges before serving.

Been looking for a new Pad Thai recipe, they always turn out rather bland. I’m a decent cook but this is a dish l can never get the handle on. Any particular tricks to make it more tasty?
