    Key Ingredients:

    * 4 large portobello mushrooms, stems removed
    * 1 cup spinach, chopped
    * 1/2 cup sun-dried tomatoes, chopped
    * 1/4 cup pine nuts
    * 2 cloves garlic, minced
    * 1/4 cup nutritional yeast
    * 1 tbsp olive oil
    * Salt and pepper to taste

    Preparation Steps:

    1. Preheat oven to 375°F (190°C).
    2. Heat olive oil in a skillet over medium heat. Add garlic and spinach, sauté until wilted.
    3. Stir in sun-dried tomatoes, pine nuts, and nutritional yeast. Season with salt and pepper.
    4. Stuff each portobello mushroom with the spinach mixture.
    5. Place mushrooms on a baking sheet and bake for 20 minutes.
    6. Serve hot, garnished with additional pine nuts if desired.
