I’m a little over a year into my sourdough journey and my loaves are consistently delicious and beautiful! So glad I started making bread, such a rewarding process 😊

What are your thoughts on this loaf??

Ingredients: 500g bread flour, 350g lukewarm water, 110g starter, 10g salt

Simple Steps:
1. Mix water, starter, and bread flour. Cover and rest for 30-45mins.
2. Add in salt while doing stretch and folds.
3. Stretch and folds over the next 2-2 1/2 hours. Coil fold for the last set.
4. Stretch and shape dough, let bench rest for 30-45mins. Covered with damp cloth.
5. Final shape, place in banneton, place in fridge for at least 12 hours – 18 is usually max for me.
6. Next morning, preheat oven to 455 F. Preheat Dutch oven for at least 30 mins. When ready, add thin layer of rice to dutch oven. Score and bake bread covered for 5 mins. 3 ice cubes.
7. After 5ish mins open up and rescore. Recover and bake for 30 mins.
8. After 30 mins, uncover, drop temp to 400 F, bake for 5-7mins (or till happy with color)
9. Cool fully before cutting, at least 2 hours.

    What’s your rationale for rescoring? Why release the heat and steam?

    Looks great.

    Now try the same recipe, add 5gr fresh yeast, mix everything until window pane about 10 minutes, let it double, deflate, shape, let it triple, bake as you baked your bread.

    No mindless stretching and folding or coiling or lamination, the same quality and taste in the final result.

    **EDIT: since OP insists on spending the time on the “whole process” and “observing it during fermentation”, this note is for beginner bakers or those bakers who are short on time and want to make bread in a passive way i.e. work it for a few minutes and then let the yeast do its work.**

    Did you get a crust shot of the one that’s sliced open, or crumb of the one that isn’t sliced, they both look good though.
