I wanted something relatively easy, and honestly this wasn't it. The chicken was great, and the quinoa salad is amazing and will keep well for the next 3 days, but damn was it involved.
Yeah, for the chicken just make the dry rub, pat your chicken until it is bone dry, position the skin to where it's tight and covering the meat, and rub on generously. It's best to have a wire rack on whatever sheet tray you have, so the drippings don't soak your chicken and everything crisps up right.
To reheat, rub a little bit of olive oil on the chicken, cover, and microwave at 75% power in increments of 30 seconds until internal temp reaches 165°.
Serve the Quinoa salad cold.

For the chicken, honestly, there isnt much in the way of added calories going onto the chicken, as there is no fat added to it. Just weigh your chicken raw, and calculate the nutrition from there. It should be right

It looks tasty. One thought though… for MD the chicken portion looks a little large (and the veggie/grain portion a bit small). The chicken should take up roughly about 25% of the plate, veggies 50% and the grain 25%.
These are guidelines and can be adjusted needed/wanted especially occasionally. So, there’s nothing wrong with going meat-heavy everyone once in a while.
just saying that not be to critical but to help anyone new trying to figure out the MD. Anyways… it really does look good, and I’m probably going to try the recipes very soon.
