I've posted this recipe before but this is actually my first time trying it in super hot, super humid weather and having it actually turn out okay!
I'll post the original recipe in the comments but my adjustments were: slightly reduce the amount of water. Mix the dough at 5:30 p.m. (after work) 2 stretch and folds, A total of 4 and 1/2 hours rise time, bake as usual.
It overproofed a little bit but I was able to reshape it before I stuck it in the oven and it turned out pretty well.
