I travelled to Indy, some years ago, and I had these waffles in a hotel I was staying (Hotel: Ironworks, Restaurant: Rize).
Even though I've had better waffles in NYC, these were like a different type of Waffles than the ones I've had in NYC, and satisfied a different craving.
These were very crispy, not very cakey or doughy, also sweeter.
Here is how they were listed in the menu:
Farmhouse Waffle
maple whip | brown butter crumble | bacon crumble
I know I'm not describing the flavor, because I don't really remember. I know they made me feel very good, and I'm trying to find something similar in NYC.
