    I’d start prepping now. If you don’t have a grill you can attempt to sear then cook in the oven but the bone will probably stop you

    Salt them, go get your grill started, let coals(YOU BETTER BE USING CHARCOAL!) come up to temp, Add any other seasoning you want, sear the steaks until they are perfect, move them over to come up to temp, rest and enjoy.

    two hours? salt them after unless you want a substandard crust.

    Maybe salt them now and start reverse searing them at 200F ASAP. That might leave you with dry enough surface for a good sear over coals.

    For a first time attempt; keep it simple….
    Spread a fair amount of table salt on top and bottom. Then black pepper. (I like a lot)

    Let them sit out till you BBQ (preheat gas BBQ at 350° for at least 5min)

    cook for like 3 minutes a side and then flip, do that again. (That’s like 12 min)
    Make sure it’s not flaring up or move them to another spot if they do…

    Poke an instant read thermometer into the middle slowly and record the lowest temp as is goes in. shoot for 130° (and keep flipping every few minutes) then pull them off and let it rest and cool for 5min before serving.

    Salt them ASAP and get them to room temp. Idk what you have to cook with. If it were me, I’d start some charcoal, use the butane torch on a cast iron to get it hot, and I’d gather the thermometers.

    **Marketing**: No. No. No. You wanted to know how to charge MORE. Charge $24.99/LB, leave the whole bone connected, AND there’s more inedible/waste weight there to charge the 25% higher price on. Double upcharge for the same weight of ribeye meat. Win-Win. We just need to get some marketing material out there to make people think this is a premium product even though it’s the exact same steak they’ve been buying forever…

  7. Do you have a meat thermometer? You need to sear them! I do 1 minute to render the edge, fat cap! Six minutes on the service side moving the position 90degrees at three minutes to get a cross hatch on the sear! 3 minutes on the other side! 16-20 mins of indirect heat, I would go nearer 16 mins and then 10 mins under foil before you cut! When you cut, cut down the bone so you take all the meat away in one piece and the slice the piece! BBQ at 375/400 for the direct portion.

    Then broil in oven for 7 minutes to sear.

    Don’t listen to me.

    Fire up the grill and the oven 10 mins ago. Grill as hot as you can get it and oven 225. Season and throw them in the oven. When the grill is ready, throw them on there 2 mins a side till 125 internal. Pull and rest.

    225 in oven for 45 minutes. Sear on infrared grill for one min on each side. Rest for 5 to 10 depending on thickness. Perfect every time. I’d recommend anybody on this sub to get an infrared grill.
