Hope this helps someone out there!!! I have tried several recipes and this one was the one that finally did it for me. It’s the only one I use now and I bake several loaves weekly 👍🏻

    Forgot to mention I only use white strong flour (bread flour)

    I used to use this recipe and method too. Problem is, once the temperature drops it’s not going to work for you any more as it only goes by time and that will change.

    Keep an eye on the volume increase of your dough, how it looks and feels when you shape and when you put it in the fridge – in winter it’s likely to take much longer and you need a way besides time to gauge it
