I wanted to say thank you to everyone who explained why the wax seal method isn't safe and introduced me to water canning! Yesterday was my first time using a water bath. I have checked all the seals and they're good. I used recipes approved for canning. I now have 7x16oz jars of peach jam and 3x16oz jars of apple butter. I really appreciate all the advice. My two big take aways are: 1. Canning tongs are amazing. 2. Apple Butter is not a recipe you should start at 7pm…

Is the headspace correct? It should be measured from the top of the glass jar to the liquid.
