For those curious, this one was a bit of a tour of Europe.

Clockwise, starting with the red rind was some “DRAGONSLAYER”, my one of my favorite English Cheddars with Ale and Mustard Seeds.

Then a Danish (of course) Gouda (only 9 mo. Aged).

A classic Italian Fontina, and then a 12 month Manchego.

Right in the middle of them is the Saint Angel, one of the creamiest French Triple Cremes you can find…with some Quince paste for spreading.
