My cousin had been raving about Cava. We don’t have them at home, but I am jealous. What a great fast casual place for this diet.
It is basically Chipotle with Mediterranean foods. You choose the base, the protein, the dips, and a bunch of other toppings.
So my bowl here has my leftover herby chicken meatballs, some black lentils, kale dressed with lemon, olive oil, salt, pepper, and red onions. I had a tomato. Some cucumbers. Leftover roasted veggies. A vinaigrette I made and thr fake chimichurri from the other day. It was delicious and colorful.
I also made some med friendly red beans and rice. I upped the holy trinity to get more veggies in there. I added a chopped chile. I used a chicken andouille sausage. Overall decent but this brand of andouille wasn’t as good as others I had and a little bland. I would up the chili powder and paprika to make up for it. This was on top of brown rice, with pepper vinegar. And a side of cucumbers and tomatoes.
