I love having homemade salsa in the pantry, haven’t bought any in years. Your headspace is a bit large, it’s supposed to be closer to 1/2 inch. Not a complete dealbreaker as long as your jars sealed but the more air there is, the more chance of it interfering with the sealing process and can discolour the part that is exposed to the air. There was a handy guide someone posted for using the threads of the canning jars to determine the headspace…
I fill jars to the proper headspace and if I don’t have enough for a pint, I’ll use a 1/2 pint. It can be processed for the same time as the pint without any issues.

Juicy and fresh.. Did you use a specific type of tomato or pepper to get that vibrant color and flavor?

That headspace is pretty concerning. You need to measure from the rim and it usually should be only 1/2 inch whereas you have over an inch there.
Too much headspace risks having a proper seal which then risks spoilage.
