Our starter has been so happy so instead of discarding decided to try making cinnamon rolls on a whim last night.

Bulk proofed overnight after one stretch and fold, then shaped and proofed early this morning and went back to bed before getting them in the oven for a breakfast at the park.

Used this recipe from The Clever Carot and added all the extra butter they suggested in the notes. Next time will try less butter in the dough and keep the extra in the filling:

Very good! Only two tablespoons of sugar in the dough so the glaze is where most of the sweetness comes from.
