Sorrel soup, sorrel liqueur – a green, slightly sour soup, the basic ingredient of which is sorrel, belonging to traditional Polish cuisine. Due to the use of sorrel, which is not suitable for storage, fresh sorrel soup is a summer seasonal dish. Sorrel soup can be prepared from commercially available concentrates throughout the year. Variants of sorrel soup also appear in the cuisine of other Eastern European countries and in Jewish cuisine.
