Anyone have any safe recipes for canning Anaheim peppers? I have plans for most of the peppers and veggies in my picture above, but I’d love to preserve some of the Anaheim peppers I picked. I know I can’t do them plain without a pressure canner, but does anyone have a tested recipe for either diced Anaheims (diced green chiles), or whole ones I can either pickle or prepare and can with a water bath canner?

As far as canning safety goes, peppers are peppers. You can use any tested pepper recipe that looks good to you. You can use the wiki link in the sidebar to go to the safe canning resources for recipes.
I know this is off-topic for the sub, but I like to ferment a pepper mash from Anaheims. It keeps for 2 years in the fridge. Just had some in scrambled eggs this morning.
Beautiful harvest! As you indicated, Anaheim Chiles are the same as NM green chile.

There are links in this article on how to can, dehydrate, freeze, or freeze dry them once they’re roasted and peeled. My favorite is to dehydrate them because the take up less space and rehydrate wonderfully.
