Was planning on adding some couscous but I just wanted a light dinner.

Salmon fillet, baby corn, asparagus, mushrooms bell Pepper, sesame seeds, olive oil (extra virgin), soy sauce and black pepper. The salmon already had a coating on, normally make my own but limited options with this week's shopping.

A few months ago I was eating a 80% UPF diet so I'm so happy with the changes I'm making 🙂
