Have been having splitting issues so decided to try picking some early and see how they taste ripened up on the counter.

I put them in a bag, try to keep them about the same ripeness but I will put one more ripe tomato that I will pull out in a day or so or better yet, if you have a banana put it in there and the gasses it releases will help the rest ripen. Also with larger tomatoes you should flip them so they set stem side down, these would be impossible to do with that but it makes it ripen more evenly and obviously check for any bruising, rotting, mold or insects. I pick lots of tomatoes green, you can even leave them on their vines as well, they taste fine.

I think they taste the same, I put mine in a brown paper bag to ripen though

They’ll ripen up perfectly fine like this. If they’ve started to change color even slightly, you can pick them, let them ripen on your counter, and they’ll taste the same as if they were fully ripe on the vine.

Idc what anyone says. The tomatoes i pick that are “blushed” never taste anywhere near as good as ones picked ripe on vine or close to it. Sometimes they even taste off-putting.
