Having visited three different belt sushi places – I noticed it is the exact same smoked flavor. I’m thinking it is probably from something similar to liquid smoke. Does anyone know what it is?

there’s various smoked, aged shoyu out there, one of those, maybe?

It’s most likely to be tare, basically mixture of soy sauce, mirin, sake, infused with aromatics like ginger and scallion. The smoky flavor you tasted probably came from the sauce with torched with propane or butane blowtorch, although some restaurants are known to just dip a lit binchotan charcoal into the sauce to impart smoky flavor

The taste kind of reminds me of okonomiyaki sauce minus the smoked part. I think the core components might be similar for the sauce base.
