Plan plan is smoke pellets and hard sear over charcoal. How are you preparing a cut like this?

    That’s (presumably) a lot of money by weight for mostly bone. I don’t typically knock tomahawks for this, but this seems egregious. Could just be the angle the photo was taken. Reverse sear starting on a smoker and finishing over charcoal for me, so your suggested method is exactly what I’d do. Enjoy!
