So I got this lamb loin at my local Istanbul market and I’m not too sure what to make or cook with it. It kind of reminds me of pork belly so I’m not sure if I want to do a Korean barbecue or just cook it in the oven or stove. Linking any recipes would help.

I must say that yours looks absolutely delicious – but it has a lot more fat than the ones I’m used to, so I’m not sure if it would work in these recipes.
It might work even better, since you could argue ours is too lean.
That’s not what’s usually referred to as lamb loin. Looks like lamb loin ribs.
Why is it priced in dollars?
We always made it Korean barbecue style. Just follow a Kalbi recipe then grill.
Little oil, Salt, Pepper, chillies flakes( optional ). Squeeze half lemon with any herbs you like, cover few mints than bbq if you got one or fry . Enjoy.
That is not lamb loin, those are ribs/breast. You should braise them.
Precious little red meat there. Lamb fat overkill.
I had spicy cumin lamb ribs at a Uyghur restaurant and they were phenomenal.
