Black Bean, Corn, and Avocado Salsa
Ingredients:
– 1 can (15 oz) black beans, drained and rinsed
– 1 cup corn kernels (fresh, frozen, or canned)
– 1 large avocado, diced
– 1 small red onion, finely diced
– 1 jalapeño pepper, seeded and finely chopped (optional)
– 1 red bell pepper, diced
– 1/4 cup fresh cilantro, chopped
– Juice of 2 limes
– 2 tablespoons olive oil
– Salt and pepper to taste
Instructions:
1. Prep the Ingredients: Drain and rinse the black beans. Dice the avocado, red onion, and bell pepper. If using fresh corn, remove the kernels from the cob. Chop the jalapeño and cilantro.
2. Mix the Ingredients: In a large bowl, combine the black beans, corn, avocado, red onion, red bell pepper, jalapeño, and cilantro.
3. Season: Drizzle the lime juice and olive oil over the mixture. Season with salt and pepper to taste.
4. Toss and Serve: Gently toss everything together until well combined. Be careful not to mash the avocado.
5. Chill(Optional): If you prefer, refrigerate the salsa for about 30 minutes to allow the flavors to meld.
6. Enjoy!
Serve with tortilla chips, as a topping for tacos, or as a side dish! 🙂
