humbuckermudgeon
255g Starter
410g Water
15g Salt
665g AP Flour
2tsp Flax Seed
2tsp Poppy Seed
2tsp Sesame Seed
1/4 tsp Onion Powder
I let it warm up for about 45 minutes after cold proofing. I then lightly sprayed it down and sprinkled more seeds on top before scoring. Parchment paper got a bit wet when I did that, so I’m not sure if I got the increased rise from the warmer dough, or the moisture in the dutch oven, or a combination of both.
