I worked at a Sourdough bakery for close to a decade and when my scale broke during the 2020 lockdown I said screw it I bet I could do alright without one. Not going lie they turned out even better than I had expected 😂 Was poolish and sour based with a 20ish hr cold bulk after a fold.
