I’m excited about my first loaf! I know the design didn’t turn out how I wanted it to.. it’s harder than it looks! Please give me tips on how to improve my crumb (?) and anything else!

Recipe:

  • 100g starter, 350 g water, 500 g flour, 10g salt
  • sit for 1 hour
  • 4 stretch & folds 30 min apart
    -bulk fermentation about 3.5 hours in 73 degree house
  • shaped twice 30 min apart
  • refrigerate overnight (about 14 hours)
  • bake at 450 in DO for 30 min lid on, 15 min lid off

    That’s an outstanding first loaf, congrats!

    Crumb already looks excellent – I don’t think there is much room for improvement there unless you’re trying to achieve something specific that’s more a matter of opinion.

    For me, I prefer a darker crust, but again – that’s just down to opinion.
