Potatoes roasted with rosemary and garlic-infused olive oil; berbere spiced carrots; husband roasted the chicken with lemon, garlic, and fresh rosemary; atop one of my favorite whole grains: Savory oat bran, made with a hint of butter, chicken broth, salt, parmesano-reggiano cheese, and some whole fat Greek yogurt. Like mashed potatoes, but better. Accompanied with a light lemon, pepper, and cream sauce.

    Yes, I triple-carbed it and I am super ok with that! Time to snuggle up in my jammies and let go of the week.

    Edit: Not pictured, a kale side salad with kalamatas, mini cucumbers, cherry tomatoes from the garden, pickled red onions, and balsamic vinaigrette.
