Decided to try a loaf with just all purpose and whole wheat instead of bread flour, imo it was pretty successful.. honestly taste wise and looks hardly any different 🤷‍♀️ anyone have any experience or opinions? I’m open to hard feed back lol (don’t hold back)

Recipe:
365g bread flour
28g whole wheat flour
320g water
7g salt
68g starter

Mix flour + water and auto-lapse for 2 ish hrs

Add starter + salt
Mix well

  • 3 sets of stretch and fold spaced 15 min apart
  • another 3 sets of stretch and fold 30 min apart

Let rise at ~78-80f till approx 50% increase (like 6ish hrs)

Shape and Fridge at least overnight

Preheat oven with Dutch oven inside at 500f
Lower temp to 450f

Score and bake with lid for 25 min, remove and bake for another 20-25 min

Rest 2-4 hrs before cutting minimum
