…is not being able to see the crumb 😭😂

I double fed my starter last week and have been getting consistent loaves ever since! Extremely happy with this beauty…but I wish I could see the crumb.

Double fed starter at 1:2:2 ratio; once peaked, discard until 20g left then fed at 1:3:3.5 ratio.
When peaked, used for my dough.

Recipe and method below.

125g double fed starter
325g warm water
500g flour (400g bread flour/all purpose + 100g whole wheat)
10g salt

  • Mix starter and water until incorporated. Mix in flour until shaggy dough.
  • Rest 1 hour.
  • Wet hands, dimple dough with fingers and sprinkle salt on top. Keep dimpling and squeezing dough until salt is mixed in.
  • Do stretch and folds (4x each side). Rest 30 mins.
  • 2nd set stretch and folds (4x each side). Rest 30 mins.
  • 3rd set. Coil folds x 8-12 instead of stretch and folds. Rest 30 mins.
  • 4th set coil folds.
  • Rest covered with shower cap for 2 hours (or until signs of full fermentation) in oven w/ light on, with casserole dish filled with hot water on rack beneath (to speed up fermentation)
  • Check at 2 hours (“poke” and “pull away from side of bowl” method)
  • Shape. Bench rest 30 mins.
  • Final shape. Pop in floured banneton overnight covered with plastic shower cap.

  • Preheat oven with Dutch oven inside to 465.

  • When heated, take dough out of fridge, turn over on parchment paper, flour and score.

  • Sprinkle handful of raw rice at bottom of Dutch oven (prevents too dark of a bottom crust by lifting the bread off the bottom of the Dutch oven a little bit. Rice can be reused for a few bakes too)

  • Place loaf inside Dutch oven.

  • Bake at 465 for 25mins, lid on.

  • Bake at 450 for 25 mins, lid off.

  • Remove and cool on rack. Cool for minimum 1 hour before slicing.

    I always ask them to take a picture and send to me. Having received a free rustic bread, they are happy to oblige.

    I give to my mom and my dads wife, I will cut a small piece of dough off and bake a mini on the side so I can see inside LOL

    I randomly give mine to people without promising/telling them so I slice mine in half to see crumb, no complaints yet lol

  5. Like you really need to see the crumb with that loaf! 😅 I think you, as well as all of Reddit knows what it’s gonna look like.
