I’m not a fan of turkey and just kind of like ham, so I started smoking prime rib for Thanksgiving a few decades back. People always told me that smoking it was a waste of a perfectly good prime rib, even people on those popular smoking meat forums were up in arms with torches and pitchforks. Couldn’t care less, smoked prime rib is amazing.

I do a prime rib roast every Christmas, coated to the gills in Montreal seasoning. Can’t wait for this year.

Looks amazing. I use a butter coating when I oven bake the prime rib, but follow cowboy Kent Rollins recipe for smoking on the grill (holes to insert smashed garlic; holes to insert cut slices of butter; dry rub exterior). Smoked one last week but gave away too many slices to neighbors so not enough leftovers. Argh!
