High end market ground beef vs Walmart ground beef.
The top is Walmart brand and the bottom stuff is from a high end market. They’re both 20% fat. What are y’all’s thoughts on this?

The wal mart beef looks like it has been ran through the grinder more than the other. It also appears to have a higher fat content.

The higher end stuff maybe grass fed and the Walmart was grain all the way through? Maybe the Walmart brand went through more of a grind and was fattier to begin with before fat trimming was added?

When it was ground makes a difference too, I don’t think Walmart grinds anything in house, whereas a market with a butcher will sometimes grind before packaging.

It could just be a slight temp difference between the two places it was butchered at.
Colder temps=slowed oxidation=less oxidized colored bits mixed in.
Walmart could ship their beef using inert gasses to slow oxidation.
There are many factors in why they look different but I don’t think it’s going to matter much. Are they the same ratio?

Warmer temps when they were grinding can smear the fat where it looks like that. Could be the heat generated by the grinder.

Ground beef will always be trim. That’s all ground beef ever will be. It’s beef and anything else that’s trimmed off or old cuts that didn’t sell and can’t be sold otherwise. No one in history will ever be using the best part of the cow for ground beef and sell it for 5 dollars a pound. There is no high quality ground beef. It will always be just ground beef. My PSA for the day.

My bet is the Walmart one is ground finer distributing the fat more evenly and also I’m guessing it’s precisely 20% vs the other one might be 15…but don’t quote me that’s a guess

Grocery store meat has color and preservatives added. Butcher meat is fresher cleaner hence the color difference
