    Make a paste out of the yeast and a little water (like teaspoons of water) and knead it into the dough. Then you can set it to rise again.

  3. This is a situation we refer to as extra-long autolyse. With a makeshift poolish as described by others, you’re still on track with a little delay.

    I didn’t let my oven cool down enough to use the proof setting after making something else. Went to se the progress and realized it was ruined. Good times today.

    That’s okay, just go another three weeks and you’ll have a sourdough starter.
