I hear leaving cucumbers on the vine too long makes the cucumber bitter.
Is this still possible to cut in smaller pieces and can for pickles?

Turning yellow means it’s well into seedy territory and it won’t have the best texture or flavour (will be watery and bitter). Not sure whether it’s worth the time and expense of lids to make something that isn’t optimal.
