Recently got diagnosed with long covid over two years after having covid. Supposedly a Mediterranean type diet is meant to help with some of the symptoms so thought I’d give it a go. Starting one meal at a time so this was my lunch for this week

Canalelli bean salad:

1/4 tin canalelli beans
1/5 cucumber
Handful of cherry tomatoes (I don’t like tomatoes so used less and chopped up small)
Handful of parsley chopped
Handful of mint chopped
Sprinkle of mixed herbs
1/4 tsp cumin
Salt & pepper
Feta cheese
And olive oil and a squeeze of lemon juice to top

I did also have a pita bread on the side as I wasn’t sure how much I’d like the salad

    That looks delicious!

    A tip for anything but baking (where ratios are important): more veggies are always possible in a recipe and will often improve the dish taste-wise as well as nutritionally. If I were to make that recipe I’d probably throw in the whole cucumber and the whole can of beans plus some chopped red onion. I don’t do fifths and quarters of things 🙂
