I used the same recipe as my first loaf, but let it sit in the fridge overnight for approximately 9 hours and then on my counter for about 4 hours at room temp before baking. The first time I let it rest about 5 hours on the counter after four stretch and folds and it was definitely underproofed. Here’s my measurements:
100g starter
350g water
500g bread flour
25g salt
