I wanted to swap normal tortillas for healthier wraps. So I tried out these wraps made from red lentils and wanted to fill them with something healthy so I came up with this. It worked out so well and was so easy!

I made my own spin of the basic recipe for red lentils wraps with Nigella seeds, garlic powder and salt. I topped it with a layer of self made hummus, a quinoa/red beet mixture with parsley and chives, arugola, avocado, cucumber and feta cheese. Lastly a sprinkle of lemon juice on top, I loved it!!

    Wrap filling recipe:

    What you need
    Red lentils wraps (see my other recipe on how to make them) or use normal tortillas
    1 cup quinoa
    400g cooked beets, chopped
    handful of fresh parsley, finely chopped
    4 tbsp of freshly cut chives, finely chopped
    3-4 cloves of garlic, finely chopped
    1 tsp of salt
    Block of feta
    200g arugola
    half a cucumber, diced
    2 avocados, thinly sliced
    Hummus (I used self made)
    Optional: juice from half a lemon
    Optional: Greek yogurt

    How you make it
    Prepare the quinoa according to the package instruction. I used 3 cups of water to 1 cup of quinoa and let it cook for about 12 minutes. Then I fluff it up and let it sit for a bit.
    While the quinoa cooks prepare the lentils according to my other recipe or skip this if you use store bought tortillas.
    Add the garlic to a pan on medium heat. When it starts to smell nicely (but make sure it doesn’t brown!) add the chopped beets with the parsley, chives and salt. Mix it regularly for a few minutes. Then add the quinoa.
    When using store bought tortillas heat them according to the package instructions.
    Spread a layer of hummus over the wrap, top with a layer of arugola, the beet/quinoa mixture, cucumbers, avocado and feta. Sprinkle some lemon juice on top to your own taste. If you like some more sauce you can add some (low fat) Greek yogurt. Fold the wrap and enjoy.

    Red lentils wraps recipe:

    What you need

    1 cup of red lentils, split or whole (I used whole)
    2 cups of water
    0,5 tsp salt
    1 tsp garlic powder
    olive oil
    Nigella seeds

    How you make it
    Soak the lentils in the two cups of water for three hours (or longer – up to 12 should be fine, if you do it overnight I would place the lentils in the fridge)
    Blend the lentils with the salt and garlic powder into a smooth batter.
    Heat a pan on low-medium heat and brush the pan with olive oil.
    Put a full ladle of the mixture into the pan and use the rounded part of the ladle to spread it into a round wrap shape. It takes a bit of practice how to get it not too thick but also not too thin, in both cases the wraps break apart if you would wrap them. Sprinkle some nigella seeds on top. Let it heat for a minute till it starts to bubble and then flip it over. Heat for another minute on the other side
