  3. Every time I go above 70% hydration the dough just sticks to my fingers with every touch and tears. If I flour my hands and the dough, the hydration goes down. What is secret to being able to manipulate it so gracefully?

    Very nice dough strength when you are scoring even though the final shaping doesn’t look super ‘tight’.
