Ingredients:
– 3 guajillo peppers
– 2 serrano peppers
– 1 jalapeño
– 4 Roma tomatoes
– 6 chile de árbol
– 2 garlic cloves
– ¼ bunch cilantro
– ¼ large onion
– ½ tablespoon dried oregano
– Pinch of cumin
– 1 cup chicken stock
– Salt to taste
Instructions:
- Roast the tomatoes, serranos, and jalapeño until slightly charred.
- Remove the seeds from the guajillo peppers. In a pot, add the guajillo peppers, chile de árbol, garlic cloves, onion, oregano, cumin, and chicken stock. Simmer for 20 minutes.
- Blend all the simmered ingredients with the roasted vegetables, cilantro, and salt to taste.
