For 500g pasta I used
Sauce:
6 egg yolks
Lots of pepper
1/2cup freshly grated parmesan
Whisk together
Salted boiling water, add your spaghetti.
While pasta is cooking, brown the diced bacon (guanciale is near impossible to get here) in a large frypan and then remove from the heat.
Just before pasta is finished cooking, take about 1/3-1/2 cup of the pasta water and slowly add to the sauce while whisking to temper the egg yolks
Toss spaghetti through the bacon, then add the sauce and continue to toss until well combined and sauce clings to the pasta.
If the sauce appears thin, put it back over a low heat and continue to toss. Don't over do it or you will end up with scrambled eggs 😅
