I’ve been experimenting with baking with protein powder. I modified some protein pancake recipes to come up with this muffin recipe. I’m sure it would work as pancakes or waffles as well.

Protein Llamas

Ingredients:
* 1 serving whey protein powder (I use Elite dymatized protein: 36 gram scoop. 140 cal, 25 grams protein, 3 grams carbs)
* 1 serving plant-based protein powder (I used OWYN zero sugar protein powder: 50 gram serving, 180 cal, 30 grams protein, 2 grams net carbs)
* 2 eggs
* 1/4 cup buttermilk
* 2 oz mozzarella cheese, shredded
* 1 tsp baking powder
* 2 tbsp PBFit powder
* 1 tsp butter

Preheat oven to 350*F.

Combine all ingredients EXCEPT butter in a large bowl. Mix with hand mixer.

Melt the butter and grease the inside of the muffin tin. Pour the batter into the tin.

Bake at 350* for 12-15 minutes

Yields: 6 llamas

Calories: 125
Total fat: 6.3 grams
Total carbs: 3.1 grams
Net carbs: 2.2 grams
Protein: 15 grams
