    • 1200g of all-purpose flour

    • 175ml (proofing) + 630ml warm water

    • 27g dry active yeast

    • 50g + 20g (butter wash) butter (unsalted)

    • 50g + 10g (proofing) white sugar

    • 15g non-iodized salt

    Makes two loaves. I use a bowl-lift stand mixer and two baking pans. Double proof, and then bake for 35 minutes at 400F.

    As Hatsune Miku once said, “butter makes it better.”

    Fresh, warm bread with butter or olive oil is all that matters. If it brings you pleasure, all that matters.
