Why does this NY strip look so weird?

    In the uk we call the strip sirloin. This one is of the last cuts of the sirloin as it moves into the rump. It’s technically the strip muscle, but it won’t be the best cut.

    It’s the end cut near sirloin (the back of the animal). Look at the line of gristle in the center. The muscle to the left is the regular strip steak. The muscle to the right (the smaller portion) is the sirloin steak.

    Quality-wise, it is usually taste the same as center cut strip steak. Some people are bothered by the gristle line in the center, some people are fine with it

    It’s called the nerve or tissue end of the striploin. This seems like the worst piece of the tissue end given how large the crescent part is.

    End cut, fine to eat, not fine to be served to you in a restaurant.

    Cut from the sirloin end of the short loin. If it was bone in it would have been a porterhouse cut. Why I generally don’t like boneless strip loins.

    That’s barely a strip. You got more sirloin in there than anything else.
