So today I decided to pickle 5lbs of beets a friend had given me and everything seems to have went well except for one thing… it seems I forgot to add the sugar to the brine.
I have no idea how I managed to make that mistake but somehow I pulled it off lol
I followed This recipe to a T but the 2 cups of sugar completely slipped my mind.
Everything seemed to go well otherwise and it seems like all my jars are sealed well.
Did I just ruin this whole batch? Should I open the jars up and add sugar and do the water bath again? Is it possible to re can something? Will they be ok as is? Will they taste aweful? lol

I think the sugar is for flavor, not a preservative. The flavor might not be what you’re looking for, but beets are sweet on their own so it’s hard for me to imagine they won’t be tasty without it.
They will be safe as vinegar is the preservative when pickling. But you may not like the flavor as much. Reprocessing could impact the texture, I probably wouldn’t.
I never add sugar to beets. They’re sweet enough by themselves.
That is more than enough acid to safely can.
The sugar is for flavor as the acid isn’t diluted. They sound good to me as beets are already sweet.
These beets have more acid than the pickled peppers I made today lol where the acid is diluted with a 1.25 cups of water.
Side note: the recipe I use for hot banana pepper rings is from a safe source.
