I keep seeing the tomato egg breakfast I can’t pronounce and it looks so good 😊 I figured I could recreate it with canned tomatoes. What should I add??

    After a google search I’d say this is a toss up between eggs in purgatory and shakahuka. It’s good but I messed up because an accidentally broke the yolk so I just stirred it in. I’ll call it shakshuka in purgatory

    Recipe:
    1 can rotel original
    2 backyard fresh eggs

    Seasonings added:
    Salt, pepper, paprika, cumin, and chili powder

    Yes! I’ve done this with Rotel and a small can of tomato paste. It’s really good

    If you wanna take it up a notch:

    2tbsp olive oil/butter

    A handful or two of cherry tomatoes cut in half

    Insert vegetable such as onion/asparagus/mushroom

    Add to small pan with a splash of water. Let simmer for 20 minutes stirring occasionally.

    Crack an egg on top. Cover and cook for like 60 seconds.

    Serve over rice/potatoes/bread.

    I cooked it in a little olive oil, definitely will be doctoring it up with extra veggies soon.

    Be careful with canned foods, the sodium levels are high. Look for low sodium canned tomatoes if you need to use canned.
    If you can’t drain & rinse it, don’t use it.

    I do a weird thing and add a bit of miso paste dissolved in water for some quick umami

    Basque piperade with eggs is really good too. We do that for dinner with crusty bread.
